The introduction to this book and the basic recipes for crepes are well worth its price. The crepes turn out tender and flavorful every time. One of my new favorites for savory crepes is the Garbanzo Flour Crepe recipe. Another excellent feature is that Seibert-Pappas gives useful information on how to fold and store crepes.One drawback to this book is that Ricotta cheese is used as a filler in virtually all of the savory crepe recipes. This can be a problem if you do not like ricotta cheese or if you do not like it when it is combined with certain foods (e.g. seafood). The recipes for dessert crepes are more varied.So far I am really enjoying this book. I have used the recipe for three of the crepe types and three different fillings. All of them are easy to follow and turned out well. The batter recipe is thin enough to use a small frying pan and swish it around rather than any specific crepe making tools. Of course those would probably make it even easier.I received a crepe maker (love it) and this cookbook for Christmas one year. My kids are so into having crepes with either strawberries or lemon juice, butter and powdered sugar that I haven't been able to try out some of these recipes, which look good. I'd recommend it - I think it's a good resource.This is our basic go to book for crepes.Like most of these recipes . Size is sometimes and issue. My crepe pan is larger at 10 inches and is too large for some desserts. would definitely recommend the book. Try having an 8 and 10 inch panI was so excited to get this book after a recent trip to Paris. There are few helpful hints in the first few pages, but overall, I found the book lacking. The sweet crepe recipes work, but the savory crepes did not work as well. There are not many recipes, and some of the recipes seemed to be missing something...like spice or a sauce.This is the best crepe cookbook I have found and have tried many of the recipes to great response from my family. I would hightly recommend it to those that wish to prepare crepes that are crowd pleasers.This is a great book my wife loves it and still makes crepes about every week. I think that it has some interesting recipes but not always the most easy to make on the fly good luck.
